Description
The portafilter is turned by hand against the group to create the extraction resistance: the lever raises and lowers the piston. The pressure profile is yours: a soft start for the pre-infusion, a firm push for the heart, a taper at the close. With a dose of about 14–16 g and a 1:2 ratio you extract on average 28–32 g in 25–30 seconds.
Use and maintenance
It requires practice: the first month is a real learning curve, not a flaw. Rinse the portafilter after every use, circulate water empty before the first cup and, every 3–6 months, run a descaling cycle. The group gasket and the basket guards should be replaced when they show signs of wear.
